Veal is very mild, lean meat from calves one to four months old. Milk-fed veal produces the most delicate meat. Look for veal meat that is very pale. Meat that is deeper red in color indicates older or grain-fed veal.
Varieties of veal leg cuts include scaloppini, shank (osso bucco), veal scallops, veal cutlets or wiener schnitzel.
